Oven-Roasted Parmesan and Garlic Cherry Tomatoes Recipe (1)

My sweet baby girl is almost 1 year old.She loves to eat, but only if it’s something she loves.

Unlike my other children, this girl is a vegetable lover (hallelujah). She cracks us up when she reaches for a tomato over a cookie (seriously, who’s child is she?). She eats them like apples and can’t get enough.

Unfortunately, I tend to reach for the cookies over tomatoes any day (as does my husband). We have been trying to follow her good example and teaching ourselves to eat more vegetables, but one can only eat so much.

So, I have been trying to find new and yummy ways to prepare my vegetables so that myself and my family will eat more of them. This dish was a huge hit, especially with my kids. I loved them warm, right out of the oven, but they were good after cooling down a bit too.

If you have fresh tomatoes from your garden or the farmer’s market, you have to give this recipe a try.

what cheese could i use instead of parmesan?

These tomatoes pair perfectly with parmesan but if you don’t like it, or don’t have any on hand, we also recommend trying:

  • feta
  • goat
  • mozzarella
  • pepper jack
  • swiss

Or really any cheese you love and prefer.

what other vegetables could i make with this recipe?

The thing I love about this recipe is how versatile it is, you can easily use any vegetables you have on hand.

I love this recipe with tomatoes, but it’s also delicious with just about any other vegetable.

Here are a few we recommend:

  • broccoli
  • asparagus
  • zucchini
  • cauliflower
  • carrots
  • potatoes (russet, red potatoes, sweet potatoes, potato fingerlings, etc.)
  • celery

FAQs

Should cherry tomatoes be cut in half before roasting? ›

Slice each tomato in half, or in quarters if the tomatoes are a bit larger. Place in a large enough baking pan, roasting pan, or rimmed baking sheet that they sit in a single layer.

Why are my roasted tomatoes soggy? ›

The main reason roasted tomatoes end up soggy is because they are overcrowded on the pan. Make sure to use a baking sheet large enough to accommodate all the tomatoes with a little breathing room. Roasted tomatoes are juicier than other roasted vegetables, so some liquid is OK (and it's concentrated and yummy-tasting).

Do I need to peel tomatoes before roasting? ›

No peeling or coring needed. Just clean, cut, roast, process, and freeze or use immediately.

What does roasting tomatoes do to the flavor? ›

As they roast, they lose moisture, and their flavor intensifies. They come out of the oven chewy & tart, with a super-concentrated, intense umami flavor. These little guys are totally irresistible! Make sure you roast a big batch – you'll find endless ways to use them.

How do you roast tomatoes in the oven, Jamie Oliver? ›

Slice tomatoes in 1 cm rounds and arrange them side-by-side on the oiled baking rack. Brush about a tablespoon of olive oil onto the tomatoes and sprinkle with pepper. Place the sheet in the middle rack of the oven and slow-roast the tomatoes for 5-6 hours.

Why do my roasted tomatoes taste bitter? ›

Keep in mind that some varieties of small cherry tomatoes have a large amount of seeds though, which can turn out a little bitter. Olive Oil – extra virgin olive oil works great for roasting. Salt and Pepper – this brings out the flavor of the tomatoes.

Can roasted tomatoes sit out overnight? ›

How Long Can Food Sit Out? The U.S. Department of Agriculture (USDA) food and safety basics states cooked food can be left at room temperature up to two hours.

Should I salt tomatoes before or after roasting? ›

When you simply salt a tomato, you not only draw out the juices, but you also concentrate the fruit's flavor. And Epi's Food Editor, Anna Stockwell, says salting tomatoes before baking is essential.

What can I do with wrinkled cherry tomatoes? ›

Slow roast on 200 degrees for a couple of hours, until they turn into beautiful sun dried tomatoes. Cool them completely and place into a ziplock bag and let them chill in the freezer until you're ready to use them in a recipe.

How to get skin off tomatoes in the oven? ›

When oven roasting the tomatoes to remove the peels, start by cutting your tomatoes in half and placing them cut side down on a baking tray. Turn your oven grill up high and place your tray several inches below the heat source. Keep them in there for about 10 – 15 minutes, or until the skins start to blacken.

What seasonings taste good on tomatoes? ›

Basil is the number one herb for tomatoes, but other herbs compliment tomatoes as well: bay, chives, dill, marjoram, oregano, parsley, rosemary, savory, tarragon and thyme. Use them by themselves or in combination with tomatoes. Planting basil next to you tomatoes helps both grow better.

What enhances the flavor of tomatoes? ›

Well, if you really want to amp up the taste of your tomatoes, cream of tartar is your answer. Yes, there are other ways to make your tomatoes taste even better and increase the acidity. There is lemon, vinegar, or my personal favorite, balsamic.

Why do you add sugar when cooking tomatoes? ›

The reason for sprinkling a pinch of sugar into a simmering saucepan of tomatoes is simple: sugar cuts the acidity of the tomatoes and creates an overall more balanced sauce. The exact acid levels in tomatoes can vary quite a bit depending on whether they're fresh or canned, the tomato variety, and the time of year.

Can you cut cherry tomatoes the night before? ›

You'll want to eat cut tomatoes later that same day, or stash in an airtight container in the fridge to use up within the next day or two. Any longer and they'll lose flavor, develop a dry “skin” on the cut flesh, and just not taste their best.

Do you cut cherry tomatoes horizontally or vertically? ›

Always slice tomatoes horizontally, not vertically.

Do you have to cut cherry tomatoes in half to dehydrate? ›

The steps for dehydrating cherry tomatoes are easy.

Rinse the tomatoes and remove the stems. Cut tomatoes in half. Place tomatoes skin side down on a dehydrator tray. If you would like, you can sprinkle a little salt on them.
