When I make this coffee cake, it’s gone in about 30 minutes, so I usually make a double batch so that we can snack on some later. My mom has always had the best coffee cake recipe! This recipe makes it easy to make a delicious coffee cake that everyone loves! I often make this easy coffee cake for holidays, when guests are visiting or any time I want to make something special for the kids!

Ingredients
2 cups all purpose flour
2 tsp. baking powder
1 tsp. salt
3/4 cup sugar
2 rounded Tbsp. shortening
1 cup milk
Instructions
- Preheat oven to 350°.
- In a bowl, mix the flour, baking powder, salt, sugar and shortening.
- Set aside 3/4 cup of the mixture for the topping (see below).
- Add the milk to the remainder of the flour mixture.
- Mix until smooth.
- Pour the batter into an 8×8 inch buttered pan.
- Sprinkle the topping over the top.
- Bake 30 minutes. Serves 9.
Coffee Cake Topping
2 Tbsp. butter
1/2 tsp. cinnamon
3 Tbsp. brown sugar
- Combine all of the ingredients for the topping with the flour mixture that was set aside.
- Mix well.

What is the middle layer?

There is no middle layer. Sometimes the topping gets swirled down a little or even sinks down a little and it is the cinnamon and stuff that you are seeing.

Pretty much the same recipie we call Cowboy Coffee Cake. My mom’s 89 & it was a recipe she got in her jr high home economics class. Its also great with raisins &/or nuts

I am dairy free and cannot find a dairy free butter substitute that melts like real butter and tastes like butter. I use Earth Balance Soy Free for sandwiches and buttering cooked food, but it melts very watery. Any suggestions? I try and avoid soy and “natural and artificial flavors” additives.

Do you think butter flavored Crisco would work?

Maybe coconut oil or coconut juice in the can or a 1/2 cup blended cashews

Those things aren’t bad but they are way more expensive and if you are trying to get out of debt something less expensive would be better.

The cake didn’t even get a chance to cool!
I put dollops of the mixture then swirled it through.I don’t have shortening so used melted marg.Yummy

This is similar to cinnamon rolls without all the work but just as delicious! The best part is I had all the ingredients!
Be sure to read the recipe through before starting.
I may reduce the salt next time… but there will be a next time!Reply
